There was no great fanfare when Chianti quietly opened its doors on one of the busier sections of Oxford Street. No media hype, no press releases. But for those who experienced Andrew Prasad's brilliant southern Italian cuisine when the Falconer first opened its doors, this will be a highly anticipated event. As with his menu a little further down Oxford Street, Prasad incorporates contemporary flavours into classic Italian dishes, only this time he is cooking with all the flavour and history of Tuscan cuisine. There's a subtlety and nuance to Prasad's menu that is a rare treat. Expect to see bold flavours such as a roasted pork belly paired harmoniously with a delicate counterpoint of saffron poached pears. Of course, no Tuscan menu would be complete without a quality bistecca, and Prasad's offering, served with eschalot and potato gratin, cavelo nero and Chianti jus does justice to the proud tradition of Tuscan beef. Darlinghurst locals can breathe a sigh of relief knowing that this master craftsman has once again taken up residence in the 2010 postcode.
