With bars like 99 Problems recently opened in Collingwood, you could be forgiven for assuming this cafe-cum-patisserie is named for the original West Coast Doctor. In fact, the Dre in question is long-term Parisian pastry chef Andrea Reiss, and thank god - word on the street is Dr Dre only knows how to make one type of brownie, and the less said about that the better.
Reiss, on the other hand, is a master of all baked goods. Honing her skills in the pastry kitchens of France and London, she has now settled back in Melbourne to open what she terms her "pastry lab". Chez Dre is a cafe, boulangerie and patisserie all rolled into one, but the sweet side of things definitely takes the lion's share. Expect to see gateaux, tarts, madeleines, macarons and choux pastry in decadent abundance.
