The Chairman and Yip


The Chairman & Yip has been one of the top dogs on the Canberra scene for some years now, retaining loyal followers thanks to its dedication to quality food and service. Recommended as one of the city's best Chinese restaurants, the menu is far from traditional, with classics given a new twist and even some European-influenced dishes (especially in the dessert section). The tender hotpot of beef and scallops remains a favourite with diners, while the signature hoisin duck pancakes are given a modern touch with the inclusion of pine nuts. The East-meets-West feel carries through to the decor, with dramatic reds and blacks offset by a silver feature wall and a pop-art Mao who watches over patrons.

The demise of an institution
Having heard all about the reviews, I gave my wife this restaurant as one of three I'd like to go to for my birthday for her to surprise me.
Well surprised we were.
Menus pasted in dog eared art magazines, wine list in a year eight style bound, damaged folder, in landscape,? with no beer listing, with NA written in biro against non avilable wines?
Didn't augur well for what was supposed to be one of Canberra's premier restaurants.

Well the Confit Pork belly was luke warm deep fried pieces of belly with a salad of shredded iceberg lettuce, cucumber,carrot & red cabbage. It was sent back. My wife's fishcakes were slightly better but still accompanied with the same foodcourt style salad.
The Shantung style Lamb main was deepfried (again!) lamb flap, possibly the cheapest cut of lamb possible. Tasty yes but after about 3 pieces way too much in terms of deep fried meat (after the pork). My wife's salmon with carrot & tomato puree was well executed but nothing special or exciting.

Service was polite but it was obvious there is no experience nor knowledge there. When questioned on some menu items, the wait staff description did not elaborate more than one ingredient beyond the menu description and when pressed we were met with a polite blank stare!
In hindsight we thought that maybe our menu choices were not necessarily appropriate nor matched but should not that also be the role of a good waiter when making a menu selection, especially when they are engaged in discussing the menu and the customer is choosing dishes to share?
Overall an extremely disappointing meal.

Enjoyable experience
Having heard a lot about the Chairman, I decided to try out their $28.50 pre-theatre menu. There were 6 entrees and 6 mains to choose from, the stand out dish being the pork chops in ginseng and honey. It was a surprisingly subtle dish.

The service was fantastic. Even though we had to be out the door by 7:45 pm, at no time did the staff hurry our orders. Thoroughly enjoyed the experience.

Best food I've had in Canberra
We went here for a special occasion. On arrival, we were shown to our seats on the empty 2nd floor, hidden away behind a curtain. My immediate reaction was wary, because I've been plenty of places were being hidden away means being forgotten. Not so here.

The service was wonderful, possibly some of the best I've seen. Prompt and friendly, staff unobtrusively filled our glasses when they looked low, cleared our plates quickly and deliberately made the trek upstairs to our corner just to glance at our table as they walked past to check we were ok.

The food...It was utterly delicious. Again, some of the best food I've had in Canberra. From the entree to the dessert, it was served hot and quickly. We didn't have the duck pancakes, but tried instead some of the other offerings on the menu. Trust me, you won't be disappointed if you drift away from these and try anything else.

All up, a wonderful night with delicious food, a great atmosphere (complimented by the delightful menus set in Chinese books!) and wonderful service. If you've got a special occasion or just want a treat, I would most definitely recommend checking it out.

Canberra Classic
This must be one of the most original restaurants around.

It may be verging on an institution by Canberra standards by now and is a darling of the corporate set, but the staff obviously strive everyday to put on a great show.

Everyone knows about the duck pancakes, but a great way to dine if you have a small party is let them choose for you and bring out classic dish after the other.

On the night I dined last our reserved table wasn't ready for quite a while. To make up for it, they generously opening a very nice bottle of wine with their compliments for us. Not expected and very welcome!

In short, a very professional outfit, original, and one of the best dining experiences in town.
