Simple flavour combinations are thrown into sharp relief when placed in the hands of the masterful chefs here. Lemon prawns may seem slightly one-dimensional until a subtle addition of fish sauce, fresh chilli and garlic brings the dish to life. This deftness of touch is a feature throughout Capital's menu, from a classic pad thai or tom yum to a whole deep-fried barramundi enhanced with lemongrass, kaffir leaf and sweet basil.
