Since its doors swung open in 1990, Cactus Jack's has cemented itself as something of a Townsville institution; some locals were practically raised on its tastebud-tantalising fajitas and casual, colourful atmosphere.
The trinket-clad walls would have witnessed some action in their time, striking a chord with everyone from value-seeking families to margarita-sipping ladies and young teens lured by their fruity mocktails. Even army personnel have been known to try a less-than-manly Kahlua margarita in the safety of Cactus's.
In the past, the southern fried chicken crispers have proved so popular Cactus Jack's has rejected offers of thousands of dollars for the secret sauce, while a crispers craving reportedly saw a couple drive hundreds of kilometres to soothe their fix. Other must-tries on the Tex-Mex menu include chilli bowls, the close-to-a-whole-cow 400-gram rib fillet, grilled enchiladas and trail blazer nachos. Also not to be missed are nachos of a sweeter kind - forget sour cream, guacamole and salsa; these are pure chocolate, polished off with helpings of cream and ice cream.
