With a strong background in restaurants (at Sydney's Bayswater Brasserie) and 10 years' experience in baking bread, the next logical step for owners Tony Papas and Michael Klausen was to open a cafe at their Banksmeadow bakery headquarters. The cafe showcases their produce in more ways than one. Customers can enjoy the breads and pastries in-house: from a fresh sourdough sandwich of duck rillettes, radicchio and walnut to a simple pain au chocolat. Or early risers can sip an Allpress coffee while quietly contemplating the bakers preparing the day's bread through windows that separate the cafe from the kitchen.
