Sparkling away at the Smiths Beach Resort in coastal Yallingup, Bouzy the Champagne Bar is an effervescent celebration of everything bubbly. From French Bollinger to local Capel Vale Sassy, the champagnes are easily the centre of attention at this classic wine den (though the reds, whites and cocktails aren't anything to sneeze at either). The light tapas creations are designed to complement the blissful beverages, and that they do, from natural oysters to harissa-spiced spatchcock with lemon yoghurt.
