Star City reportedly spent around $860 million on rebranding as the Star and repositioning their focus on fine dining, and every cent can be seen in the stately dining room at Teage Ezard's new playground. From the open-plan kitchen to the floor-to-ceiling windows looking out over Sydney Harbour, no expense has been spared in making a meal at Black a memorable experience.
For menu inspiration, Ezard has moved out of his comfort zone, opting to leave behind his mod-Asian roots and attempting to channel the great American grillhouses, but with a contemporary European bent. It's an interesting mix that leads to an even more interesting a la carte read.
You'll find an abundance of steaks (wet- and dry-aged, grain- and grass-fed) with marbling scores that send them into triple-figured extravagance, all cooked sous vide before being kissed briefly on a woodfire grill. There's also Ezard's signature seafood courses, poached in specially imported Hawaiian ocean water (unnecessary food miles be damned) to impart that clean North Pacific taste.
Rounding out the offerings at Black, the restaurant's bar boasts an intimidating list of more than 700 drops, all coming together to present the very best of new-world American wine.
