The surge of Sydney restaurateurs hanging their aprons in Melbourne continues with the arrival of chef Guillaume Brahimi on the shores of the Yarra. The lauded chef is splitting his time between Guillaume at Bennelong (the Sydney Opera House's gastronomic jewel) and his more casual Bistro Guillaume, which is billed as an Aussie take on the traditional French bistro. Decor-wise this means an exquisite space of dark wood, marble and bistro chairs, which stops safely short of collapsing into a heap of cliches. Design company Hecker, Phelan and Guthrie have filled the room with stylish touches, such as blousy silk light fittings, that would provoke jealousy even on the streets of Paris. The menu is as classically bistro as the name implies, with in-house smoked salmon and creme fraiche sitting alongside Hunter Valley snails and an enormous roast rib eye with rosemary, thyme and garlic. However, diners should expect the unexpected, with Brahimi likely to pull out some more modern plats du jour.

the restaurant is wonderful........
that's exactly what can be said! the food was beautifully presented and full of flavour and from what we had seen being served at other tables around us and the positive comments being said...not much we can fault. Very knowledgeable and courteous staff especially the somelier who was most obliging and spot on with the choice of wines with our meals. My only negative is to avoid Le Bar downstairs......unless you are an expert at pronouncing the names of Belgium beers as some staff feel they need correct you.....
