Using organic ingredients where possible, ex-Van's chef Paul Watters' menu is produce-driven, so the results are fresh and flavoursome. The all-day brekkie uses free-range eggs, and the range of cakes, pastries and other sweet treats never extend beyond the $5 barrier, helping to ease any guilt associated with breaking the diet.

Flavour, Integrity, Success
I have been pleased, mightily, by the exquisitely thoughtful dishes on offer at Aubergine. The chef makes his (apologies if it was a female chef) sweet tomato relish for the delightfully pink-in-the-middle lamb burger dish, he roasts his own roma tomatoes for the sublime sweetcorn fritters – unformed and light rather than cooked in a ring mold - and the best bacon is cooked to crisp perfection on the side. The coffee is velvety bliss, I could find no fault - not even a wobbly table leg or a draughty spot on a squally day - and that is a tall order. If I were the proprietor of any other of the cafes on the formidable South Terrace I would be sending my spies in daily to see what real standards are - and for a damn fine meal.
