There's never been any doubt that the sky-high views at Sydney Tower are among the city's best, yet the food at its two restaurants has historically languished at far lower levels. Thankfully, things are looking up, following a $1.5 million renovation in 2005. While one restaurant remains buffet-style, fine diner 360 Bar and Dining is finally serving food to match the restaurant's lofty heights.
Michael McCann, who designed the jaw-dropping surrounds at Pyrmont's Flying Fish, has redone 360's interior, and the result is an opulent room full of horsehair leather, bronze and mahogany. With such decadent surrounds and such a lofty position, one can't help but expect the modern French-influenced food to match.
Chef George Diamond (formerly of award-winning Siggi's in Brisbane) has been causing a quiet sensation behind the stoves, combining classic French techniques with a very contemporary dash of the unexpected. With dishes including the likes of lavender consomme with sea scallops, calamari and chive flowers; or poached lobster with truffled buttermilk pebbles and tea jus, choosing between the curiosity-piquing dishes is a diner's only trial. This is where the degustation comes in handy, offering a three-, four- or five-course sampling of Diamond's menu.

Terrible Experience
Our overall experience was terrible. The tower restaurant was a lovely location however the food was substandard for a 5 star restaurant and certainly not worth the $95 per head that it cost. The service was extremely poor and the restaurant was not busy enough for our table to be so neglected then to receive rude service. I will not be dining there again. Also the observation tower closed at 8:15pm and we were not told this when we made the booking or when we arrived if we had been told we could have arrived earlier or amended our booking to go to the observation tower.
